Vegan Chicken Noodle Soup


  • 1 yellow onion thinly sliced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 2 cloves garlic minced
  • 1 TBSP vegetable oil
  • 6 1/2 cups vegetable broth
  • 1 cup fettuccine cut into 1-inch long pieces
  • 1 package Seitan
  • 1/3 cup nutritional yeast
  • 1 TBSP apple cider vinegar
  • 1 TBSP maple syrup optional
  • salt to taste
  • pepper to taste


  • In a large pot, heat the vegetable oil, onion, celery, and garlic over medium heat for 5 minutes
  • Add the broth, then bring to a boil
  • Add the pasta, then boil for approximately 5 minutes
  • Add the seitan, nutritional yeast, apple cider vinegar, and maple syrup (optional)
  • Add salt and pepper to taste. Enjoy!
